In cool and temperate areas, aim to plant from late winter to early spring; in subtropical regions, mid-autumn to early spring works best; and if you’re in the tropics, wait for the dry season from April to July. For folks in the South, you can plant after the last frost or in late summer for a late autumn harvest. Ideally, you want to plant celery when the soil is between 12°C and 21°C. Before planting, soak the seeds overnight and sprinkle them on the soil surface without covering them— they need light to sprout, just keep in mind that it can take 2 to 3 weeks for the seeds to germinate, so patience is key.
